A Hermeneutic Study on the Third Place Based on Single-User-Centered Usability in Specialty Cafes - Focused on Premium Coffee Consumption Environments -

(Background and Purpose) South Korea's specialty coffee market has expanded rapidly, with hand-drip coffee priced above 20,000 KRW per cup becoming increasingly common. This price transformation is reshaping how cafe spaces are used, as single-user customers, professional exchanges between baristas and patrons, and digitally mediated occupancy patterns can no longer be explained by Oldenburg's classical conception of the third place as a setting for sociability and conversation. Existing spatial research on Korean cafes has focused predominantly on group-oriented use, leaving single-user-centered usability under-theorized. This study empirically analyzes the spatial and behavioral characteristics of single-user-centered usability in specialty cafes within premium coffee consumption environments, and hermeneutically reinterprets the third place theory in this context. (Method) The median price of 9,125 KRW from 18 cafes certified by the Blue Ribbon Survey's two-ribbon designation was established as the operational threshold for a premium coffee consumption environment, with the survey used only as a reference population for threshold derivation. Ten cases exceeding this threshold were selected through purposive sampling, and 90-minute non-participant observation was conducted at each site. The analytical framework comprises 25 indicators across four dimensions: spatial physical configuration, usage behavior, territoriality and privacy, and ICT environment. Each indicator was scored on a 1-5 unipolar Likert scale (3=mean), with raw measurements and percentile values reported in parallel for traceability. (Results) First, single users were substantive occupants in every case, including the contrast case where they still constituted 5% despite no dedicated single seating. Second, most spaces treat group use as the default design assumption, prompting users to construct personal space by occupying wall-side, window-side, or bar-counter seats and deploying belongings as territorial markers. Third, the ICT environment and service style function as active design variables influencing usage behavior, evidenced by zero digital-device users without power outlets and concentrated long-stay users where outlet accessibility reached 66%. Fourth, territorial behavior is determined not by usage density but by the combination of spatial structure and service style, with the contrast case recording 69 territorial actions while two structurally controlled sites recorded none. These findings are visualized in the two-dimensional mapping of <Figure 1>, where 7 of 10 cases cluster in the upper-right quadrant representing the new third place. (Conclusions) The findings suggest that the sociability- and conversation-centered character of the third place no longer operates as the sole mode of cafe use within premium coffee consumption environments, and that the axis of exchange is shifting from horizontal sociability to vertical, expertise-based exchange between baristas and customers, not negating but transforming Oldenburg's original attributes. Accordingly, this study proposes four spatial design guidelines: securing diversity in single-seat typologies, applying territorial support structures, ensuring coherence between service style and spatial structure, and intentionally designing the ICT environment.
